Miso Soup for Two

miso-soup1 small onion chopped
1 carrot diced
I small red potato peeled and diced
A small handful of washed and chopped fresh spinach or other greens
1 clove of garlic minced
3 cups of water
6 tsp of miso
Salt and pepper
optional: cubes of tofu
Sauté the first three ingredients in extra virgin olive oil for 3-5 minutes on low heat. Add the spinach and garlic and sauté for 1-2 more minutes. Do not let garlic burn. Add water and bring to a simmer. Simmer until the potato and carrot are soft. Add small cubes of tofu if desired. Meanwhile, put 6 generous tsp of miso in a cup with some warm water and blend until smooth. Turn off the burner and let the soup sit for 3-5 minutes. Add the miso mixture to the soup and blend well. Add salt and pepper as desired.
