A new casserole recipe!

Have you ever searched and searched for a recipe and finally given up. That is exactly how and why I created this new dish. Basically, it includes all my favorite ingredients layered and baked!

It is perfect for a summer family dinner or potluck. Afterall……this weekend is Memorial Day weekend and isn’t that the unofficial start of summer?!

Enjoy! As always, anything can be adjusted and changed to make it your own.

Judy’s Family Casserole – Mexican Style

Ingredients:

1 lb ground turkey (can also use ground beef)

Taco seasoning mix (I like Simply Organic Southwest Taco mix)

1 medium onion, chopped

1 green or red pepper, chopped

2 large flour or corn tortillas cut in strips

2 jars (16 oz each) of your favorite salsa

1 can black beans, drained

2 cups of organic corn

3 cups shredded Mexican cheese

cilantro

plain yogurt (sour cream if you prefer)

avocado

Directions:

Sautée, in EVOO, the onion and green pepper and turkey meat in a skillet until done. Drain if needed. At the taco seasoning and +/- 1/4 cup of water to desired consistency and taste. Layer the meat in a 9×13 lightly greased casserole dish. Layer the tortilla strips on top. Next, layer the corn and black beans. Spread the jars of salsa over the casserole. Top with the cheese. Cook in the 350 oven until heated through and bubbling, approximately 30-40 minutes.
Serve with chopped cilantro, yogurt and sliced avocados. To compliment the meal, add a green salad and/or baked sweet potatoes. How about more tortilla chips and guacamole! I love to serve this meal with juicy sweet sliced oranges.
If you prefer a vegetarian option, you can replace the meat with sautéed or baked tempeh.
