This is a wholesome alternative to dairy. Almonds are full of healthy fats, vitamin E, potassium and magnesium.
Preparation time: 8 hours for soaking and 5-10 minutes for processing
1 cup of whole raw almonds, soaked 8 hours, rinsed and drained
2-3 cups of water
1-3 pitted dates (optional)
1/4 tsp vanilla (optional)
Dash of cinnamon (optional)
Combine all the ingredients in a blender and process until smooth.
To separate the milk from the pulp: squeeze the mixture through cheesecloth or a “More than a Nut Milk Bag” and compost the pulp or reserve it for use in cookies, pie crusts, breads or cakes.
