Rice and Sweet Potato

extra virgin olive oil
1 small sweet potato or half of a large sweet potato
1 cup of brown rice
2 garlic cloves peeled and grated
1 small onion finely chopped
2 tsp Oregano
1/2 tsp Turmeric

Bake the sweet potato until done. Let it cool for a few minutes.  Peel it and cut it up in to small pieces. Sauté the onion and garlic in the olive oil for a quick minute. Add the rice and stir. Add the water,oregano, turmeric and sweet potato.  Mix well and cook as per rice directions.
