When strawberries appear, in my humble opinion, any lingering winter blues are undeniably extinguished.
Spring flowers and strawberry red now adorn our landscape and color our world.
Now, the occasional cool night is welcomed.
Strawberry shortcake, jam, vinaigrette, smoothies, applesauce, crepes, chocolate covered, salsa….you name it!
My new favorite recipe is:
Strawberry Cashew Milk
It is so easy and …..completely and utterly good for you!
Here is my easy recipe:
-Soak 1 cup of raw cashews in water for at least 4 hours (can soak overnight in the fridge).
-Drain the cashews.
-To your blender add the cashews and 3 cups of water (you can experiment with this ratio if you want thicker or thinner consistency).
-Add 1 cup (or more) of de-stemmed and whole strawberries, a pinch of salt, and 1 tsp of vanilla.
-Blend until smooth and creamy.
-If you need additional sweetener you can add maple syrup.
-Enjoy!
I love this as a dessert, or for breakfast. Some like it cold. I prefer room temperature.
For variety, add dark chocolate. Try it with other types of berries or with bananas. I also love just plain cashew milk with a little maple syrup to sweeten it a bit.
Strawberries are full of vitamin C, folate, and antioxidants. They are nutrient dense and promote skin and eye health, fight bad cholesterol, contain heart healthy potassium, are low calorie and fat free.
Cashews have heart healthy monounsaturated fats, zinc, magnesium, copper, vitamin K, lots of healthy minerals, and zero cholesterol.
It is a wholesome and healthy shake. If you need a dairy substitute this is a great alternative.
Strawberry season has been juicy and sweet for us here in NC! Sadly though, it is quickly coming to a close.

Your strawberries are gorgeous. I had a strawberry dress when I was a little girl with a strawberry for the pocket! Part of why I love them so.

I tried this and it is really good! And the cashew milk is very easy to make.
It is super easy. And it is fun to add other ingredients and experiment. But I love it just plain!
