Carrot Goodness!

Several years ago, I traveled to Jerusalem. My sister and I liked walking to the old city. On the other side of the Damascus gate there was a vendor who made carrot smoothies.

Sadly or not, that is one of my fondest memories of walking through the maze of colorful goods at the market!

I never forgot how refreshing and nourishing that simple, straight up, carrot smoothie tasted. It seemed to be just carrots and water. Because of the language barrier I really couldn’t get a full list of ingredients.

Needless to say, I came home and tried to duplicate it, as I often do when I eat something so delicious.

Yesterday I craved this smoothie and luckily I had a bag full of fresh, organic carrots from my favorite local farm, RambleRill Farm.

Here is my easy recipe:

It makes two tall glasses. I am pretty sure there weren’t chia seeds in my Jerusalem smoothie but I like to add them for an extra protein punch. Completely optional. And all quantities can be adjusted.

Note: not all carrots are created equal. Some can be bitter. So I would taste test before blending to make sure your smoothie doesn’t turn out bitter.

Also, I have on occasion added coconut milk to make it creamier. You can do a blend of coconut water and milk.

Carrots are SO good for you. They are a good source of beta carotene (a type of vitamin A), vitamin C, fiber, vitamin K1, potassium, antioxidants and minerals.

They nourish your skin, your hair, and your eyes.

Carrots are crunchy, colorful and nutritious so …….indulge!
