Addictive…….

Following on my zucchini theme…..this recipe is truly addictive.

But…..I promise you it is very healthy. You know I wouldn’t suggest anything otherwise!

My dear friend and cook extraordinaire, Lisa, introduced me to this recipe years ago. She got it from a family member that lived in Pensacola, Florida…..hence the name.

If you need a dose of popularity or more attention in your life…..bring this to your next party!

Pensacola Dip

1 finely chopped medium to large zucchini
1 pear finely chopped (or Granny Smith apple)
1 mango finely chopped (or a peach)
1 red onion finely chopped
1 fresh ear of corn (or 1 small can of corn drained)
1-3 ripe avocados finely chopped
1 can of black beans, drained and rinsed
Fresh lime juice (+/- 3 limes)
Salt as needed

Cook the corn on the cob. Remove kernels from the cob. Finely chop all other ingredients and blend with lime juice. Salt to taste. Cover and marinate in the refrigerator for one day. This is a great recipe you can make, at most, two days ahead. Serve with your favorite corn chips.
Black beans can be substituted for another type of bean. The fruit can be substituted as well but mangoes and peaches and pears are the best combination. All ingredients can be adjusted.
