A Nutty and Healthy Recipe to Share

As I mentioned in my summer reflections post, this past summer I spent time exploring new cookbooks and recipes.

One of my new favorite cookbooks is 100 Days of Real Food -Fast and Fabulous by Lisa Leake.

Lisa decided to embark on an experiment – feeding her family only real food. Out of her journey came real transformation and an amazing cookbook.I have been loaning out this cookbook because I want to share it with friends and clients. An important goal for everyone is to reduce or cut out processed foods.

My friend, Rayann, tried the below recipe and now it is a favorite of mine.  She even switched it up some and added cacao and maple syrup. Yum.

This nutty bar is super easy. Try it and let me know your thoughts. I might even experiment and try this recipe with different nuts. Don’t know why that wouldn’t work!

Copycat Cashew Cookie “Larabar”

Ingredients:

1 cup of dried Medjool dates, pitted
1 cup of raw cashews
1/4 cup of peanut butter (preferably organic)

1. In a food processor, combine the dates, cashews and peanut butter, and 1 tablespoon of water. Puree until the mixture starts to stick together. Add a little more water if necessary to help the mixture come together.
2. Use your hands to squeeze the date mixture in to one big clump. Mash it down on a cutting board or a sheet of wax paper to form an even rectangle about 1/2 inch thick. Use the sides of your hand or a knife to make the edges straight. Cut it into 12 even squares. As an alternative, you could roll the mixture into balls. Store in the fridge. They can also be kept at room temperature.

This healthy snack is gluten free, dairy free, vegetarian, and also freezer friendly!

  1. Looks like a good “new” cookbook. I remember how much I loved “Whole foods for the whole family” back in my La Leche League days. I’ll bet this one has incorporated many ingredients that are now readily available.
