And berry-licious!
Strawberries, raspberries, blueberries, blackberries, black raspberries……
Berries practically make me drool….. and they are ever present right now!
Besides gobbling them up in handfuls, I like to freeze them while in season.
My absolute very favorite berry pastime is to make what I call my berry elixir.
I take lots of berries and a bit of water (just a very little to cover bottom of pan) and cook them down for maybe 10-15 minutes, over low heat. I stir and mash. Then, I let it cool.
I don’t typically add any sweetener but if you prefer, you could add some honey or maple syrup.
It is so delicious. It is like an antioxidant shot….super powers emerge!
I freeze the berry mixture in small containers for later use. It makes a great sauce for a pound cake, ice cream, smoothie, oatmeal, or a topping for a bowl of cut up fruit.
When wintertime starts to linger, spirits improve dramatically when I thaw a berry elixir. Gratifying for body and soul.
If using blackberries with stubborn seeds, either disregard and consider it good fiber or, you can pour through a sieve to remove the seeds.
