Snappy and Sweet!

Our days have been so rainy. I squeeze a walk in whenever I can between the rain showers. Feels almost tropical outside.

What really invigorates me on my woodland walks is the sweet fragrance in the air. The honeysuckle is blooming!

And something else springy, sweet, and snappy has appeared. Sugar snap peas!image

I smile when farmers display buckets of this crunchy sweet goodness at our farmer’s market.

As a child I hated peas. I would tuck them in my napkin and excuse myself from the table to secretly dispose of them. I bet my mom knew…..

Not sure when I transitioned to loving them, but there is no going back now.

Did you know that sugar snap peas give you a great vitamin C punch?  We can all benefit from an immune boost. They are also a rich source of B complex vitamins, potassium, magnesium, iron, phosporous, and vitamins A and K. That crunch adds protein, beneficial fiber, and antioxidants to your diet.

I am curious…..how do you like to eat your snap peas?

My favorite way is lightly sautéed in a stir fry. Sometimes I just par-boil them and eat plain with a little olive oil. I also love the peas in salads. Snap peas and fresh mint make a great combo. When I have a handful left I throw them in to my smoothies. I love pea soup. I blend with coconut milk to make it a bit creamier.

Trying to entice your children or grandchildren to eat these tiny nutritious pods?

I realize some may not advocate for playing with food, but my sister made up a fun game she plays with her granddaughter. They open the pods, one by one, and make a wish on each little pea. Before you know it, the pea pods are consumed! Let’s just hope their wishes come true!

Snap peas make an excellent prop for a math lesson. Subtract each one you pop in your mouth. Or, can you count to ten?

Enjoy your peas! The season is short. Eat them fresh!
