I would like to share the recipe for my new afternoon energy boost.
They are nutritious and delicious AND offer the perfect late day kick to continue the day with energy. Certainly they are less sleep disruptive than a caffeine infusion.
Droopy no more. I promise.
These nut butter bites make a great anytime snack, dessert, breakfast, children’s party treat, and easy travel fare.
Chocolate and Chia PB Bars
Ingredients:
1 cup of nut butter ( I use organic peanut butter)
1/3 cup of raw honey
1/3 cup melted coconut oil
1 tbsp vanilla
1/4 cup chia seeds
1/4 cup raw cacao powder
1/4 tsp salt
1 1/2 – 2 cups oatmeal (I use a generous 1 1/2 cups of old fashioned rolled oats)
Directions:
Mix all of the wet ingredients in to a bowl. Add dry ingredients and mix well. Chill the dough in the fridge for about an hour. Take out and either roll in to balls or place in a 8×8 pan, gently press down, then slice in to small bite size bars.
Store them in an airtight container and refrigerate. I like to freeze them and then pull out the quantity I need. They thaw in minutes.

Glad you liked them, Barbara! Daisy gets exhausted very easily but she knows exaclty what to do about it. She thinks we are way to stressed and should all take many naps a day…..
